




Over the weekend, I made Emma's apple and beetroot soup. It was such a simple and easy-to-follow recipe. I personally don't quite like beetroot. Growing up, I remember a period of time when my mum made me drink freshly squeezed beetroot juice, everyday! Ugh! But yup, that aside, this recipe is actually really yummy. I loved how the apple and cider makes the beetroot taste a little bit less 'raw'. The spring onions and cream just makes it even nicer. In terms of it being a hearty soup, it sure is. It is so filling and goes really well with hot buttered toast. The recipe can be found in our recipe box!
