Our little Saturday


It was so gloomy and the sun didn't really appear, so Darren and I stayed home all day. We made Daifukus, also known as Mochi! I didn't have any recipe at all and failed horribly twice in the morning and tried again in the evening, determined to get it right and I did it! Third time lucky! : )

Apart from the Mochi having a bit too little filling and looking like they're from Mars, out of shape and all, it was still quite tasty. Soft and nice and bouncy. Darren was having so much fun squishing it and flattening the dough, while looking at it bounce back. Haha

Anyway, it was quite delicious and so here's the recipe just so you can make it too. At home, and all under 30 minutes!

Yummy Azuki (Red Bean) Mochi/Daifukus:
Mix in a bowl the following:
1 Cup Glutinous Rice Flour
1/4 Cup Sugar
2/3 Cups Water 
* You can use green tea or add matcha powder to your 
water so it'll have a green tea-ish sort of taste

Mix all of the above in a deep bowl till lumps 
disappear to form a watery mix
Clean off the sides of the bowl, leaving just the mixture in the middle
Cling wrap the bowl and microwave on high for 2 minutes

Take it out and remove cling wrap
Mix top in and stir the now sticky paste around
Cling wrap again and microwave for a further 1 minute

Powder table top with some corn flour and 
empty sticky dough onto table top
Sprinkle some corn flour over sticky dough and over your hands
Pinch tiny bits and roll into balls, slowly kneading the middle bit into a well for your filling

At this point, you can start filling your Mochi with the filling you got. I bought my red bean filling from the store. It comes in a can, all sweetened and ready to go!

Anyway, I placed a lump of red bean in the middle, in the well I've created in my small ball of dough and roll it up, pressing the sides in till the red bean paste's all tucked nicely inside.

There you go! You've made your first Mochi! : )

Remember to store them in an air tight container!
